Ingredients


For Batter
   
·         2 cup Rice soaked for 4 hours and drained
·         1 cup urad dal for 4 hours and drained
·         5 tsp sugar
·          ¼ tsp turmeric powder
·         1 tsp lemon juice
·         salt to taste
·         1 pinch fruit salt or baking soda


For tempering

·         oil - 1 tbsp or ghee
·         water - 1 glass
·         mustard seeds - 2 tsp
·         sesame seeds - 1 tsp
·         green chilies, chopped - 2
·         sugar - 1½ tbsp.
·         pinch of salt
·         lemon juice - 1 tsp
·         curry leaves

Method
1.   Add Rice ,urad dal Add ¾ cup of water and mix well to get a thick and smooth batter and keep overnight for fermented.
2.   Add sugar, salt, turmeric powder, lemon juice on fermented batter.
3.   Prepare pressure cooker or steamer. Boil water in a steamer.
4.   Add the fruit salt/soda to the batter just before steaming and mix lightly until batter is light and fluffy.
5.   Grease container. Pour the mixture immediately and spread evenly by rotating the container clockwise.
6.   Fill the container ⅜, like we do for cake baking.
7.   Steam in a steamer for 12-15 minutes or till the dhoklas are cooked.
8.   Insert a toothpick to check if Dhaka is cooked if it comes out clean then dhokla is ready. If not, steam for few more minutes. Keep aside.
9.   Heat the oil or ghee in a small non-stick pan and add the mustard seeds.
10.                When the seeds crackle, add the sesame seeds, green chilies, and sauté on a medium flame for 30 seconds.
11.                Add 1 glass water, sugar, salt, lemon juice and mix well.
12.                Let it come to a boil, and remove from heat.
13.                Pour the tempering over the prepared dhoklas and spread it evenly.
14.                Cut into pieces and serve immediately  with chutney or ketchup.
