Calabaza Soupy Noodles
 
 
Ingredients
- 200-300 gm pumpkin  
 
- 1 potato 
 
- ½ cup peanuts
 
- ½ ounce glass noodles, cooked and drained
 
- 250 ml coconut milk
 
- 1/3 cup bean curds 
 
- Oil to fry
 
- Salt and pepper to taste
 
Method
- Boil the pumpkin/squash,  potato and peanuts in  water. Simmer for at least 35 minutes.
 
-  If using bean curds, fry in hot oil until light brown on both sides. 
 
- Slice into strips or small cubes and set aside.
 
-  Add the coconut milk and salt. Bring to a boil. 
 
-  Add the fried beans and noodles. Let cook for a minute or so. Serve hot.
